Over a hundred years ago, as folk history tells us, Scandinavian people around Lake Michigan adapted their traditional outdoor cooking style to the logging camps of the Upper Great Lakes. This is the beginning of the Great Lakes Fish Boil, a hearty meal designed to easily feed a large group with what was abundantly available.

Traditionally potatoes, onions, salmon, whitefish and trout, were all boiled together. Near the end of the cooking a pint of kerosene was poured onto the fire to produce an over-boil, signaling the start of the meal. Drawn butter, fresh parsley, bread and coleslaw are all traditionally served at the table, along with lots of cold Michigan beer.
